Classic Chicken Ala King recipe from the BBT Lodge kitchen

A Classic Chicken Ala King recipe, that is nothing short of one of the best comfort foods out there

We all have our small list of comfort food that will ease our minds and take us to our happy place. We believe that this Classic Chicken Ala King recipe is one of those dishes. No matter how down you were, after you had this dish the world will seem just right again.

Feeds 8 people


  • 7 Chicken Breasts
  • 1 punnet Mushrooms – sliced
  • 3 Mixed Bell Peppers – sliced
  • 2 Onions – rough dice
  • Sunflower Oil and Butter – for sauté
  • 125 ml Butter
  • 125 ml Flour
  • 1000 ml Chicken Stock
  • 500 ml Milk
  • Salt and Pepper to taste


Poach the Chicken Breasts as usual (reserve stock). After letting it cooled down, de-bone the breasts carefully and dice them. Dice the onion, slice the Bell Peppers (not too thin) and the Mushrooms. Sauté the diced Onion, sliced Bell Pepper and Mushrooms in a frying pan until just getting soft. Add the butter, flour and reserved Chicken stock to make a Béchamel sauce. Stir the Chicken pieces into sauce and the sautéed vegetables. Add the milk until you have the correct consistency. Allow to simmer gently for approx. another 10 minutes. Rice or Pasta makes the best companions with this dish.
