Greek Chicken Salad recipe for the more health-conscious audience


Health eating is everything these days. And this delicious, easy-to-prepare, light Greek Chicken Salad recipe will certainly help you to keep the balance in your daily protein, starch and fiber intake ratio. Furthermore it can be prepared in just over an hour with very little hassle. Consequently the Chef of our Midrand guest house loves to fix this dish. Because it always leaves her extra time to prepare for dinner.

Ingredients for Chicken stock

  • 150 g Chicken breast – skinless, boneless
  • 1 Onion – whole with skin on
  • 1 Green pepper – whole
  • 1 Turnip
  • 2 Carrots
  • 1 Parsnip – if available
  • 2 Celery sticks
  • 1⁄4 teaspoon White Pepper
  • 1⁄4 teaspoon Salt

Chicken Salad ingredients

  • 150 g Chicken breast – skinless, boneless, cooked in stock
  • 1 Red Onion – finely chopped
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Plain yogurt
  • 2 teaspoons Lemon juice
  • 1⁄4 teaspoon White Pepper
  • 1⁄4 teaspoon Salt

Greek Salad ingredients

  • 250 g Cherry Tomatoes – cut in halves
  • 150 g Feta cheese
  • 1 Onion – Medium size, sliced into rings
  • 1 Cucumber – Peeled and sliced into thick quarter-moons
  • 1 Green pepper – sliced
  • 14 Black olives
  • 1 tablespoon Virgin olive oil
  • 1 teaspoon Oregano – dried, chopped

Method for the Greek Chicken Salad recipe

Put the chicken breast in a pot and top it up with water so the chicken is
fully submerged. Then add all the chicken stock vegetables and seasoning to it.
As a next step, cook the chicken slowly on a medium heat until the breast is cooked thoroughly.
(This shouldn’t take longer than 45 minutes). When ready, cut the
chicken into strips.
Then add the Pita bread into and already pre-heated oven of 180C° for about 2
to 3 minutes just to make it fresh and hot (maybe crispy on the outside).
Mix all main ingredients of the chicken salad in bowl. Add seasoning and
mix it a bit further.
Now mix the ingredients for the for the Greek salad and serve it into pasta
bowls, creating beds for the chicken salad. Then serve the chicken on top
and place the cut quarters of the Pita bread on the side of the plate like
garnish.


There you go. Your Greek Chicken Salad is all ready.
